EOS Estate Winery 2004 Cabernet Sauvignon
We recently had some family out to visit that had arrived with this great bottle of Cabernet from EOS. (Paso Robles, CA) Filled with aromas of toasted oak, black cherry, berries and molasses, this wonderful red wine did very well with our grilled tri-tip steak. Tastes of raspberries and plum with a nice long finish of dark chocolate and spice really made our evening enjoyable. What a great full-bodied gift!
Food pairing ideas:
Serve with grilled meats, prime rib or aged cheddar cheese.
Technical details from the Winemaker:
The EOS 2004 Cabernet Sauvignon is comprised of 83.5% Cabernet Sauvignon, 9.5% Petite Sirah, 5.5% Cabernet Franc, 1% Malbec and .5% Petite Verdot. Was in the barrel for 15 months in 3% new French oak, 24% new American oak, 12% one-year old, 35% two year old and 26% neutral oak. Harvested in September 2004.
And in case you were wondering where the “EOS” came from…
The EOS Estate Winery was named after “Eos,†the “Goddess of the Dawn†in Greek Mythology. Eos was the inspiration for the winery’s harvesting of its Estate winegrapes before, or right after the sunrise, to keep the fruit cool and help retain fresh varietal character. Gallo of Sonoma 2003 Cabernet Sauvignon
Gallo of Sonoma brings us a great bottle of Cabernet Sauvignon wine for the price! Nice aroma’s of raspberry, currant and spice on the nose with a smooth and lingering finish! Not our absolute favorite Cabernet BUT for that price, it’s a very drinkable red wine!
Food pairing ideas:
Try this or any other Cabernet Sauvignon with some red meat. This wine goes great with some bbq’d steak or with almost any grilled or smoked red meat.
You can order Gallo of Sonoma 2003 Cabernet Sauvignon here.

Solaris 2005 Cabernet Sauvignon
The Solaris 2005 Cabernet has some serious plum and blackberry taste but I think it just lacks complexity… probably because it’s so young. We both were in agreement that this wasn’t the best wine we’ve tasted from Solaris, however we were so excited to try it we didn’t bother letting it sit for a year to develop more. Patience can be your best bet for some wines…we’ll try again in a year or so.

Chappellet Napa Valley CA 2004 Cabernet Sauvignon
We try to visit Napa Valley 2-3 times a year. Each time we take in a few of our favorite wineries and then of course, we try some new places. On our most recent trip, we asked around a few friends, “where should we go?” On top of everyone’s list and on top of some rocky terrain in St. Helena was the vineyard Chappellet. This family owned vineyard has some fantastic wines we just couldn’t go home without!
This intense 2004 Cabernet Sauvignon is very rich and polished, with hints of espresso, currant, herbs and spicy oak. We let it decant for about 40 mins before drinking and it was just super enjoyable. It could sit for another few years to develop even more but we had to uncork it and give it a try and we’re glad we did.
You can actually purchase this great wine online at wine.com.
And when you get up to Napa, give Chappellet a call for a tasting. You’ll love it. Just be careful going up and down that big hill!

Chalone Vineyard CA 2003 Cabernet Sauvignon
From the southern end of Monterey County in California, Chalone Vineyard brings us a nice rich, drinkable Cabernet. Black currant and black cherry flavors with a hint of oak vanilla. (take in the smell and you’ll really sense the cherry and vanilla) For only around $15 a bottle, this Cab was really enjoyable.

Dog House CA 2003 Cabernet Sauvignon

The “Checkers’ Cab” really didn’t do it for either of us. Description had the word “oak” in it so immediately we had to try it. (I’m a big “oak” fan in the wines…love that flavor) Anyway, we let the wine sit for awhile before drinking just to allow for proper breathing. Gave it a pour, a good swirl and things started off ok. Smell was good but taste, not so much. Ended up drinking a half a glass each and then decided to use the rest of this bottle of wine as a “wood chip soaker” or for a “wine reduction sauce.” (which worked great) This wine unfortunately ended up in our “dog house.”

Liberty School Paso Robles 2003 Cabernet Sauvignon
Can’t give this one a complete review because we finished that bottle of Curtis fist. Between the two of us, I think our tastebuds weren’t up to par. Tasted great at the time though! It’s always been a good wine those times we’ve had it in restaurants and would recommend you try it!

Kenwood Sonoma County 2002 Cabernet Sauvignon
This one sat in oak for two years leaving it some great flavor. Blended from Merlot and Cabernet Franc, Kenwood makes a nice rich and smooth flavored wine! 2002 is a great year for this one.

Solaris Napa Valley 2002 Special Release Cabernet Sauvignon
We picked up a few of these wines down at High Times and just really enjoyed it. For $10 you can’t go wrong. “…dark berry and black cherry with hints of sage and mint…” flavors. Not as good as the reserve but a great taste for the buck. We’ll grab a case if they still have them! Can you say, “Solaris Fans.”

Solaris Napa Valley 2000 Reserve Cabernet Sauvignon
“Explosive proportions of cassis, blackberry, and dark cocoa are tempered by fine tannins, hints of vanilla-oak, and moderate acidity.” That summed up this wine perfectly. It’s a nice “dry” red wine…. a delightful surprise. We will be finding and drinking more of this one! Check out Solaris Wines. They have a great bar chart for a tasting profile of each wine. Cool.
